Twice Baked Potatoes
5 small russet potatoes, washed and scrubbed
½ cup milk
¼ cup sour cream
2 Tablespoons butter
¼ cup sharp cheddar cheese, grated
Extra cheese for topping
Chives
Salt and Pepper to taste.
Bake potatoes in oven on 375 degrees F until fully cooked about 1 hour. Remove potatoes from oven and let cool for 10 minutes. Slice off the top third of the potato lengthwise, and scoop out the insides, and put them in a small mixing bowl. Add milk, butter, sour cream, cheese, salt and pepper, chives to the potato insides and beat with an electric beater until creamy (you may need to add more milk). Spoon the potato mixture into the potato skins and place in a baking dish. Return to oven and bake potatoes for and additional 15 minutes, remove from oven and sprinkle cheese over tops and return to oven for an additional 5 minutes or until cheese is melted.
