Peppermint Bark

Peppermint Bark

6-12 candy canes ( I like using less)
1 lb white chocolate
1 lb semi-sweet dark chocolate
Pure peppermint extract
Parchment paper*
Jelly roll pan*

Place the candy canes in a Ziplock bag on a hard surface use a hammer to crush up the candy canes until they are in small bite size pieces. Line the jelly roll pan with the parchment paper.

Melt the dark chocolate in a double boiler. Once chocolate is completely melted, pour onto parchment paper. Let cooler for at least one hour in the refrigerator or until hardened.

Melt the white chocolate in a double boiler. One chocolate is melted add a few drops of the peppermint extract to taste, and stir well together. Then pour the white chocolate onto the hardened dark chocolate.

Evenly spread crushed candy canes into the warm white chocolate. Let cool until chocolate is completely hardened. With a sharp knife break up the pieces and place in airtight container.

* I used a large baking sheet and sprayed it with PAM. It worked well.
