Lime Tortilla Chicken
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1 tsp. honey
3 boneless, skinless, chicken breasts
1 can (14.5 oz.) Mexican stewed tomatoes
1 teaspoon dried cilantro
1 small can diced green chili’s
¼ teaspoon chili powder
¼ teaspoon garlic powder
¼ teaspoon lime juice
1 cup grated Fiesta/Mexican Cheese
Pre-heat oven to 350 degrees F. Tenderize the chicken with a meat tenderizer. Then combine oil, lime juice and honey in shallow bowl. Place finely crushed tortilla chips on plate. Dip chicken breasts in oil mixture, then press the chicken into the chips, place in greased baking dish, and Bake for 25 minutes or until chicken is cooked through.
While chicken bakes, puree tomatoes, cilantro, diced green chili’s, chili powder, garlic powder, and lime juice together in a blender to make a sauce.
After chicken is done remove the chicken from oven and spread evenly with sauce. Sprinkle with cheese. Return to oven and continue baking until cheese melts about 5-6 minutes. Serve with rice.
