Raspberry Cookies

Raspberry Cookies

½ cup butter, softened
¼ cup sugar
1 egg
½ teaspoon vanilla
1 ¼ cups flour
Dash of salt
Raspberry Jam
Glaze-Optional (recipe below)

Preheat oven to 375 degrees F. In a medium mixing bowl, cream together butter, sugar, egg, and vanilla. Add flour and salt and continue mixing until a dough forms.

Knead dough slightly on a lightly floured surface. Using a medium cookie scoop place dough on a lightly greased cookie sheet. With your finger or a round measuring spoon make an indention in the middle of each cookie. Bake 10 minutes. Remove from oven and spoon raspberry jam into the indention.


Return to the oven for an additional 8-10 minutes, or until lightly browned. Makes about 1 dozen cookies using a medium scoop. Optional: Drizzle glaze over cooled cookies.

Glaze: In a small mixing bowl combine ½ cup powdered sugar and 4 teaspoons milk. Beat until smooth. (I usually double this).
