Malibu Chicken

Malibu Chicken

4 boneless skinless chicken breasts, pounded thin.
4 slices of ham
4 slices of Swiss cheese
1 egg
¼ cup flour
¼ teaspoon salt
1/8 teaspoon pepper
¾ cup fine Italian bread crumbs
2 tablespoons extra virgin olive oil
2 tablespoons butter
1 tablespoon water

Combine flour, salt and pepper in a bowl. Stir egg and water together in a separate bowl. Coat each chicken breast with the flour mixture then dip into the egg mixture, and then coat with bread crumbs (making sure to press crumbs in firmly). Heat oil and butter in a large skillet over medium heat. Brown chicken about 4-5 minutes on each side. Place browned chicken in a baking dish, top each piece with a slice of ham and a slice of cheese. Bake at 350 degrees F, until cheese melts.


Dipping Sauce:

1 teaspoon mustard
¼ cup mayonnaise

Combine mustard and mayonnaise and stir well.

Serve chicken Immediately with sauce.
