Ground Beef Enchiladas
6 flour tortillas
1 cup sharp cheddar cheese, grated
1 can sliced olives
1 pkg. enchilada sauce prepared per pkg. directions
½ cup salsa
I like using the Western Family Enchilada Sauce packet.
Filling:
1 lb. lean ground beef
1 medium onion, chopped
1 small green bell pepper, chopped
1 clove garlic, minced
1 pkg. taco seasoning
1 cup water
½ cup salsa
3 Tablespoons tomato sauce
1 (4 oz) diced green chili’s
¼ tsp. red pepper flakes
1 can refried beans
¼ tsp chili powder
1 cup sharp cheddar cheese, grated
In a skillet combine ground beef, onion, bell pepper, and garlic. Cook until ground beef is fully cooked. Add 1 cup water, salsa, diced green chili’s, red pepper flakes, tomato sauce, and taco seasoning pkg. Reduce to low heat and simmer until excess water is boiled out.
Preheat oven to 375 degrees F.
Meanwhile place refried beans into a microwave safe bowl and cook in microwave until warm. Add chili powder to beans and stir well.
Prepare enchilada sauce as per directions on the pkg.
Warm tortillas in microwave so you can roll them easier. Spread beans on a flour tortilla, add meat and sprinkle with cheese, roll and place in a glass baking dish. Repeat with each tortilla. When enchilada sauce is done add ½ cup salsa to the sauce, mix well and pour over tortillas. Sprinkle with cheese and olives. Bake for 20 minutes uncovered.
