Feather-Light Overnight Rolls
1 cup butter (2 sticks)
¾ cup sugar
2 teaspoons salt
1 cup cold water
2 (.25-ounce) pkgs. Yeast
½ cup warm water
4 eggs, beaten
7 ½ - 8 ½ cups flour
Melted butter
In a pan bring the 1 cup water to a boil. Add the 1 cup butter, sugar, and salt. Remove from heat once butter is melted. Add the 1 cup cold water. In a separate bowl dissolve yeast in the ½ cup warm water (make sure it is not to hot). When the first mixture is luke-warm, add yeast mixture and beaten eggs. In a mixing bowl add 3 ½ cups flour and the liquid mixture, and mix. Slowly add as much as the remaining flour as you can. When done mixing take the dough out of the bowl and knead a few times and then place the dough in a greased bowl. Cover and refrigerate overnight (sometimes I skip this part if I forget to make ahead and it still tastes good). Remove the dough from the refrigerator and let rise for 2-3 hours or as needed. Make dough into rolls and place on a greased baking sheet. Let rise for about 10 minutes. Bake at 400 degrees for about 12-15 minutes or until done.
These irresistible rolls are so light and delicious.
