Potato Casserole (a.k.a Funeral Potatoes)

Potato Casserole (a.k.a Funeral Potatoes)

This recipe can easily be halved since it does make quite a bit. Just use a smaller casserole dish to bake it in, and bake for about 45-50 minutes.


1-26 oz bag frozen hash browns
2 (10 ¾ oz) cans cream of chicken soup
1 soup can of milk
2 cups sour cream
2 cups sharp cheddar cheese, grated
1 onion, chopped
Salt and pepper to taste
4 tablespoons butter, melted
1 ½ cups corn flake crumbs


Sauté onions until tender. In a large bowl mix together the frozen hash browns, soup, milk, sour cream, cheese, and onion. Lightly grease a 9 x 13 in baking dish and pour the potato mixture in and even out. Melt the butter and combine with the corn flake crumbs. Sprinkle the corn flake crumbs over the casserole. Bake uncovered at 350 degrees F for 50-60 minutes or until hot and bubbly.
